Vinification
The sparkling Ferrari Maximum brut is made exclusively from Chardonnay grapes harvested in the first half of September. The vines are cultivated in various communes in the Adige, Cembra and Laghi valleys at heights of between 300 and 700 metres above sea level. After the second fermentation, the brut rests for 36 months on the lees.
