Dry, well-structured and delightfully precise on the palate. With a lot of mellowness and a pleasantly supporting acidity. Medium-long finish of good aromatic persistence. Spicy and balanced.

Details
Pigato grapes from clay soils. The wine is fermented in stainless steel tanks and rests in bottles for two months after filling. Fine, floral and fruity with a mineral structure.
Recommendations
A good choice with vitello tonnato or even sea bream from the oven.
Vinification
The grapes are harvested by hand then transported with care to the winery. After the maceration period, the gentle pressing and the temperature-controlled fermentation, the young wine is matured for a few months in stainless steel tanks. After bottling, the pure Pigato rests in bottles for another two months before going on sale.
