Details
For years, the Domaine de Chevalier has been a reliable producer that punches above its weight given its relatively low pricing.
Surrounded by woods, the winery is a gem in the southern Pessac-Léognan area. Steeped in history, wine has been made here since as far back as the 17th century.
Vinification
The red wines are cold macerated for five to six days before being fermented in stainless steel tanks. This gives them a particularly clean fruit flavour. Once the final blend has been completed, the next stage in the process is classic maturation in barrique for between 14 and 24 months, depending on the vintage. Between 40 and 60 per cent of the barriques are new.
