A sophisticated accompaniment to seafood, shellfish and saltwater fish with rich side dishes.
Vinification
Around 23,000 bottles of white wine are produced annually from the Sauvignon blanc and Sémillon varieties on just five hectares. The grapes from the 35-year-old vines are harvested by hand. After gentle pressing and subsequent fermentation, the young wine is matured in barriques for 18 months.
