Sparkling amber; very intense, sweet scent of sultanas, dried apricots, honey, nuts and wood aromas. Very concentrated, complex and with a hint of oxidation notes. Full and lush on the palate, with a soft texture, supported by a juicy fresh acidity, dried bananas and dried apricots. Wonderfully balanced, with a light caramel touch to the finish. Despite the sweetness, the acidity is prominent and the wine persists for a very long time.

Details
The sugar-rich white grapes are hung out to dry after harvesting and are not pressed and fermented until February of the following year. Soft texture, fresh acidity, dried bananas and dried apricots, a light caramel touch.
Recommendations
A great accompaniment for any kind of cake – and of course cantucci.
Vinification
The grapes are harvested when ripe and in a very healthy condition. They are then hung on the roof beams of a neighbouring farmhouse to dry. In February, the dried grapes are gently pressed and the juice is fermented for around a month in small 50-litre wooden barrels. The wine is aged in the same barrels for around three years. Only then is the wine drawn into the bottle.
