Vinification
The late-harvested grapes are pressed straight after picking. The filtered must is then cooked and, after chilling, stored for 4 to 8 months in oak barrels. The ageing/maturing process in successively smaller wooden barrels produces the balsamic reduction through natural shrinkage. After a few years, the concentrated and slightly sweet vinegar is removed from the final barrel and transferred to glass vials.
