Vinification
The grapes, some of which have noble rot, are manually harvested in several passes and then selected again on sorting tables. This means that only the best grapes with a very high sugar content are processed. As a result, the yield that can be obtained from the grapes is low. The fermentation process in steel and cement tanks or in wooden barrels is stopped by cooling once the desired alcohol content has been reached, so that an exceptionally high residual sugar content remains in the wine. Subsequent maturation takes place in barriques, some of which are new, for 12 to 24 months.
