This wonderful white practically melts in your mouth. Ripe fruit and gently toasted notes, full-bodied and complex. Fermented in barriques made of Allier and Tronçais oak and aged on the fine lees for up to six months.
Recommendations
A sophisticated pairing wouldn’t go amiss: how about lobster or langoustine?
Vinification
Antinori has been producing this outstanding white wine since 1985. Only the best grape lots are used for the flagship wine of the Castello della Sala winery. After manual harvesting and careful pressing, the must goes to fermentation in French barriques from Alliers and Tronçais. The young wine is then left on the lees for five to six months.
