Recommendations
Excellent paired with aged Parmigiano, hearty pasta dishes and game ragouts. Goes especially well with agnolini and mushroom sauce or with venison stew.
Vinification
Some of the grapes are left on the vine to soak up the last rays of autumn sun so they develop additional sweetness and concentration. After fermentation, the wine spends a year in wooden barrels, some of them made of new oak, before it is transferred to stainless steel, where it hones its final contours.
