Vinification
After pressing and destemming the selected grapes on sorting tables, fermentation begins between 26°C and 28°C. The entire fermentation process takes place for 25 to 30 days in conical wooden vats, using only natural yeasts. Once malolactic fermentation is complete, the wine is aged for 36 months in oval 30-litre French oak barrels. Maturation in the bottle takes at least 12 months.
