An elegant accompaniment to grilled Dover sole or spaghetti vongole as well as terrines and pies.
Vinification
After hand-picking, the grapes are gently pressed. Eighty per cent of the must is fermented in stainless steel tanks and the remaining 20% in one-year-old barriques. The young wine then rests for a few months on the fine lees before bottling.
