Details
A characteristic Aleatico: intense ruby red combined with highly nuanced aromas of roses and berries. Sweet on the palate with a perfectly balanced acidity.
Recommendations
Outstanding with a chocolate cake or with blue cheese.
Vinification
After the grapes have been picked and crushed, the juice stays on the skins for around 15 days at a low temperature (approx. 5°C) without fermenting. This long maceration time promotes the extraction of the grape aromas and brings forth a richly coloured must. Once the must has been drawn off the mash, the alcoholic fermentation takes place at a controlled temperature of around 18°C. An abrupt temperature drop (down to 0°C) stops the fermentation and thus prevents all the sugar from converting into alcohol. The wine rests in stainless steel tanks at a low temperature until it is bottled.
